Spiced Chicken in Apple Sage Broth

I am so excited I got the opportunity to develop this Spiced Chicken in Apple Sage Broth recipe for the Union Square Greenmarket as part of my slideshow take over of their Instagram account!  As I have explained before on this blog, I credit the Greenmarket with converting this corporate lawyer from a take-out ordering addict into a healthy cooking lover.

This spiced chicken recipe is one of my new favorites because it perfectly encapsulates the spicy and sweet flavors of fall in a light but satiating way,

One-Pan Lemon Dill Chicken and Okra

I wanted to go down the one-pan meal route for some time now, because I love the ease of prep and having a light, flavorful sauce carry an entire meal.   Finally felt inspired to lock down and develop this one-pan lemon dill chicken and okra dish when I saw the heaps of bright green dill (along with okra) in season at my local farmers’ market. You just can’t go wrong flavoring any protein or vegetables with dill and lemon.

Thai Basil Fried Quinoa with Ground Chicken

Between the chicken, veggies, and quinoa, this Thai basil fried quinoa dish is the perfect one bowl meal that you can scoop into a container and take to work. Thai basil chia chicken meatballs

This Thai basil chia chicken meatballs recipe combines two of my meal prep ideals—(1) use of interesting flavors to keep me hooked on a dish during the week; and (2) super easy and quick to make (less than ten steps (including cutting up the basil and garlic) and prepped and cooked in under an hour). Two thoughts about this one:

  • I really like chia seeds as a sub for bread crumbs: Been meaning to experiment with chia seeds as a substitute for bread crumbs as an ingredient “binder” for a while since they add more nutritionally to a dish,

Moroccan Cinnamon Chicken and Harissa Spiced Carrots

I make no secret of my passion for fiery hot ethnic food, but I am also a fan of dishes where the heat is more subtle, with warm spices supplying the main flavor. Both the Moroccan cinnamon chicken and the harissa spiced carrots fall into the latter category. The combination of cinnamon, cardamom, and turmeric provides an earthy sweetness to the chicken, while the smokiness of the harissa, with a touch of maple,
